Sambucus nigra 'Elderflower' 

A large shrub with masses of sweetly perfumed, cream flowers.

The flowers can be used in salads, fruit dishes like muffins, compotes and jellies, or added to punches, cordials and champagne. Partners well with stevia, Mexican Tarragon, Spearmint and lemon-flavored herbs. The cream flowers look good with the blue borage, orange nasturtium and purple heartsease flowers.

Like so many of the older herbs, Elderflower is purported to cure a wide range of problems. it is especially recommended for all those issues with the respiratory organs associated with colds and flu. The berries are very high in vitamin C so are also good as both curative and protective herb for most winter illnesses. 

Plant in almost any spot in the garden and does well in poor dry soils and prefers full sun. Needs a bit of space and if planted at 1m centers will make a quick and dark hedge. 

Requires regular applications of Seasol and Powerfeed. Water during summer months when dry.
